Easy Potato Soup

  • 6 large potatoes
  • 1 large carrot, grated
  • 1/4 tsp celery salt
  • 1/4 tsp chopped parsley
  • 1 stick oleo
  • 1 large onion, chopped
  • Salt and pepper

Boil potatoes in enough water to cover. Sauté carrots and onion in oleo Add celery salt and pepper When potatoes are tender, mash them right in the pan without draining off water. Add all ingredients, except the parsley and cook 30 minutes, stirring often.

Sprinkle with parsley and serve.
