Eggplant Dressing

  • 1 medium sized eggplant
  • 1 lb ground beef
  • 5 Tbsp oleo
  • 1/2 cup onions chopped
  • 1/4 cup chopped green pepper
  • 2 cup cooked rice
  • 1 tsp black pepper
  • 1/2 cup bread crumbs

Peel eggplant and cut into cubes. Cook in boiling salt water until tender. Drain, mash with fork. Cook ground beef with 3 tablespoons of oleo. Add onions and chopped pepper. Cook until tender Stir in mashed eggplant, salt and pepper. Pour into baking dish. Brown bread crumbs in remaining butter and sprinkle over eggplant mixture.

Bake in 375° oven for about 20 minutes.
