Chicken Las Vegas

  • 12 chicken breasts, split and deboned (lay fat and season)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1 cup white onion, chopped fine
  • 2 cloves garlic
  • 1/2 lb butter

Melt butter and first 5 ingredients; brush on flat chicken breast. Roll chicken breast with thin slice ham; wrap a piece of bacon around this. Hold with toothpick. Arrange in flat baking dish. Add 1 can chicken broth. Cover while baking at 350°. When tender, add 1 can mushroom soup. Put back in oven uncovered for approximately 20 minutes or until bacon crisps. Chopped boiled eggs may be added if desired.
