Twenty Minute Mexican Casserole

  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 1 can Cheddar cheese soup
  • 1 can Ro-Tel® with chilies
  • 1 1/2 lb ground beef
  • 1 small onion, chopped
  • Salt and pepper to taste
  • 1 package Doritos® corn chips
  • 1/2 lb grated Cheddar cheese
  • 1/2 bell pepper, chopped
  • 1 tsp. chili powder

Mix soups and Ro-Tel® tomatoes in a saucepan and heat over low flame. In skillet, brown ground beef, onion, bell pepper, salt, pepper and chili powder. When done, add to soup mixture. In a large casserole dish, place a layer of Doritos®, a layer of the meat mixture and cover with grated cheese. Repeat in each order ending with cheese.

Cover with foil and let set 5 or 10 minutes, so hot mixture will melt cheese.

Serve immediately.
