Cheeseburger Pie

  • 1 lb ground beef
  • 1 1/2 cup chopped onions
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cup milk
  • 3 eggs
  • 3/4 cup Bisquick® baking mix
  • 2 (medium) tomatoes, sliced
  • 1 cup shredded Cheddar of American cheese

Cook and stir beef and onion in 10 inch skillet over medium heat until brown; drain. Stir in salt and pepper. Spread in greased pie plate (10 x 1 1/2 inches). Beat milk, eggs and baking mix until smooth, 15 seconds in blender of high or 1 minute with hand mixer. Pour into plate.

Bake 25 minutes. Top with tomatoes; sprinkle with cheese. Bake until knife inserted in center comes out clean, 5 to 8 minutes.

Bake at 400°.

Makes 6 to 8 servings.
