Margie’s Spanish Delight

  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1 1/2 lb ground beef
  • 1 (6 oz) can tomato paste
  • 1 large can tomatoes
  • 2 Tbsp chili powder
  • Salt and pepper
  • 1 package wide noodles
  • 1 can cream corn
  • 1 can mushrooms (if desired)
  • Grated cheese

Brown beef, onion and pepper in skillet. Add tomato paste, tomatoes, chili powder, salt and pepper. Boil and rinse noodles. Add corn and mushrooms. Pour all ingredients together and mix well. Pour into a casserole dish and top with cheese.

Bake at 350° for 25 minutes.
