HONEYSUCKLE JELLY

  • 8 cups honeysuckle blossoms (NO LEAVES)
  • 4 cups water
  • Bring blossoms and water to a boil. Turn off heat and cover with a lid. Allow to steep 4 hours to overnight. Strain juice through cheese cloth and a strainer.
  • 2 cups honeysuckle juice
  • 4 cups sugar
  • 1/4 cup lemon juice

Bring the juice, sugar and lemon juice to a boil that cannot be stirred down. Add one package of liquid pectin and continue to stir while boiling for 2 minutes. Place a couple of spoonful’s of the jelly on a plate and put in the freezer for 1 minute. after the minute check to see if it is jelly like I did in the video. Run your finger thru the middle and make sure it doesn’t run back together.
