Pig’s Feet and Beans

  • 1 lb red beans
  • Water
  • 1/2 tsp soda
  • 3 fresh pig feet halves
  • 2 tsp chili powder (more if desired)
  • 2 Tbsp flour
  • Vegetable oil to moisten

Soak beans overnight in stew pot with enough water to stand 1/2 inch above beans. When you start cooking, add water to cover if needed. Add soda and pig’s feet; simmer 2 hours until beans and meat are tender. Remove pig’s feet from pot; set aside. Mix chili powder and flour with enough vegetable oil to make a thick paste and stir into pot of beans. Bring to a boil. Stir will. Return pig’s feet.
