Yam Bread

  • 3 cups sugar
  • 1 cup Wesson oil
  • 4 eggs, beaten
  • 1 cup sweet potatoes, cooked and mashed
  • 3 1/2 cup flour
  • 2/3 cup water
  • 1 cup nuts, chopped
  • 2 tsp salt
  • 1 tsp baking powder
  • 2 tsp soda
  • 2 1/2 tsp cloves
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice

Combine sugar and oil. Add beaten eggs and sweet potatoes. Sift dry ingredients together. Add to preceding mixture and then add water. Grease three one pound coffee cans, do not flour. Bake (cans standing up) at 350° for 1 hour and 15 minutes.

Pumpkins may be used in place of yams.
