Mexican Corn Bread

  • 1 cup yellow corn meal
  • 1/4 cup oil
  • 1/2 cup water
  • 1 tsp salt
  • 1 large can cream style corn
  • 2 Tbsp flour
  • 1/2 cup buttermilk
  • 2 eggs
  • 1/2 tsp soda

Mix preceding ingredients.

  • 1 lb ground meat
  • 1/2 lb Cheddar cheese
  • 1 large onion, chopped
  • 2 green chilies chopped

Brown meat until red is out. Pour corn bread mixture into a 13×9 inch pan. Spread meat mixture on top and sprinkle with onion and peppers.

Bake until done.

Sprinkle cheese on top and melt.
