Golden Corn Bread

  • 1 cup yellow corn meal
  • 1 cup sifted enriched flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 4 tsp Clabber Girl® baking powder
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup cooking oil

Sift together dry ingredients into bowl; add egg, milk and cooking oil. Beat with egg beaten until smooth, about 1 minute. Do not overbeat. Bake in greased 8 inch square pan or greased muffin pan in hot oven at 425°F for 20 to 25 minutes.

Serve warm with butter or covered with creamed chicken, fish or meat.
