Hot Water Bread

  • 1 1/3 cup meal
  • 1/4 to 1/3 cup flour
  • 1 tsp baking powder
  • 1 1/2 tsp salt
  • Hot water

Mix dry ingredients. Add boiling water until mixture sticks together. Pat spoonful of mixture in hands until flat (about 1/2 inch thick). Place in small amount of hot oil in cast iron skillet. Fry until golden brown on both sides. Delicious with mustard greens or buttered and served with pear preserves!
