Texas Fruit Cake

  • 1 small can coconut
  • 1/2 lb candied cherries
  • 1/2 lb candied pineapple
  • 2 1/2 cup pecans
  • 1/2 cup flour
  • 1 can sweetened condensed milk

Mix in order given. Spray miniature muffin pans with non-stick spray. Fill with cake batter. Place pan of water on bottom of oven while baking. Bake at 350° for 30 to 35 minutes or until golden brown. Let set 10 minutes before removing from pan.

Makes about 48 miniature fruit cakes.

Great for Christmas gifts.
