White Chocolate Cake

Cake:

  • 4 oz white chocolate
  • 1 cup butter
  • 2 cups sugar
  • 2 1/2 cup flour
  • 1 tsp baking powder
  • 4 eggs
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 1 cup pecans, chopped
  • 1 cup coconut

Melt chocolate. Cream butter and sugar in a bowl. Add eggs (slightly beaten). Add chocolate, flour, milk and vanilla. Mix well. Fold in nuts and coconut.

Bake in 3 layer pans at 350° for 35 minutes.

Put on White Chocolate Icing.

Icing:

  • 4 oz. white chocolate
  • 1 stick margarine
  • 6 Tbsp buttermilk
  • 1 lb powdered sugar
  • 1 tsp vanilla

Melt butter and chocolate together. Add milk. Remove from heat. Gradually add powdered sugar. Add vanilla.
