Brown Sugar Pound Cake

Cake:

  • 2 sticks butter
  • 1/2 cup shortening
  • 1 (1 lb) box brown sugar
  • 1 cup sugar
  • 5 eggs
  • 3 1/2 cups cake flour
  • 1/2 tsp baking powder
  • 1 cup milk
  • 1 1/2 tsp vanilla

Cream butter, shortening in a bowl and add the sugars, 1 cup at a time. Add the eggs, 1 at a time, beating well after each addition. Add flour and baking powder together and add to the creamed mixture, alternately with milk; add vanilla and mix well.

Pour into a tube pan.

Bake at 350° for 2 hours.

Icing:

  • 3 cups sugar
  • 1/2 cup water
  • 1 egg beaten
  • 1 cup milk
  • 1 stick margarine
  • 1 tsp vinegar
  • Pinch of salt

Filling:

Place 1/2 cup sugar in a heavy skillet. Cook over low heat, stirring constantly until melted and brown. Add the water and stir until dissolved. Add remaining sugar. Mix eggs with milk and stir into sugar mixture. Add margarine, vinegar and salt; cook to soft ball stage and cool. Beat until creamy and spread on cake.
