Fresh Apple Cake

  • 1 1/2 cup oil
  • 2 cup sugar
  • 3 eggs
  • 3 cup self-rising flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup nuts
  • 3 cup copped apples (peeling on)
  • 2 tsp vanilla

Mix sugar and oil; beat at high speed 1 minute. Add eggs one at a time, beating after each egg. Mix dry ingredients. Add to first mixture. Fold in vanilla, apples and nuts. Batter will be stiff, but apple juice thins it as it cooks.

Bake at 325° for 1 to 1 1/2 hours in tube pan.
