Carrot Cake

Cake:

  • 2 cups flour
  • 2 tsp baking soda
  • 2 Tbsp cinnamon
  • 2 cup sugar
  • 1 1/2 cup Wesson oil
  • 4 eggs
  • 3 grated carrots

For Cake, beat eggs and sugar. Add oil then dry ingredients and carrots. Use loaf pan.

Bake at 350° for 30 to 40 minutes.

Frosting:

  • 3 oz cream cheese
  • 1/2 box confectioners sugar
  • 1/2 stick margarine
  • 1 tsp vanilla
  • 1/2 cup chopped nuts

For frosting, cream all together and add nuts.
