Pineapple Upside Down Cake

  • 2 1/2 cup flour
  • 11/2 Tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1 1/2 tsp ginger
  • 1 cup sugar
  • 1/4 cup minus 1 Tbsp molasses
  • 3/4 cup shortening minus 1 Tbsp
  • 2 eggs
  • 1 cup boiling water

Cover bottom of pan with sugar and butter or oleo. Cover this with pineapple. Cream shortening and sugar. Add eggs. Cream well. Add sifted dry ingredients. Then add boiling water. Pour over pineapple.

Bake at 350° till done.
