Oatmeal Cake

Kathryn Russell, Linville High School

Cake:

  • 1/2 cup shortening
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/4 plain flour
  • 1/2 tsp salt
  • 1 tsp soda
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 vanilla
  • 1 cup oatmeal
  • 1 1/4 cup boiling water

Place oatmeal in boiling water; set aside until all other ingredients are mixed then add oatmeal. Bake in 9×13 inch pan at 350° until done, about 25 minutes. Add frosting while hot and place under broiler until it bubbles.

Frosting:

  • 2 eggs
  • 1 Tbsp milk
  • 1 stick butter
  • 1 cup light brown sugar
  • 1 cup coconut
  • 1 cup pecans

Heat all ingredients except coconut and pecans. When hot remove and add.
