Buttermilk – Coconut Pie

  • 3 eggs
  • 1 1/4 cup sugar
  • 1/4 cup margarine, melted
  • 1/3 cup buttermilk
  • 1 tsp vanilla
  • 1 1/3 cup flaked coconut
  • 1 unbaked 9 inch pie crust

Beat eggs. Add sugar, margarine, buttermilk and vanilla. Mix. Stir in coconut. Pour in shell. Bake at 350°F. for 45 minutes or until set. Delicious hot!
