Coffee Ring

  • 6 Tbsp butter
  • 3/4 cup sugar
  • 4 eggs, separated
  • 1 whole egg
  • 1/2 tsp grated lemon rind
  • 2 1/2 cup flour
  • 1/2 cup milk
  • 2 Tbsp raisins
  • 1 tsp baking powder

Cream butter; add sugar, egg yolks, whole egg, lemon rind, 1/2 of flour, milk and raisins. Blend well. Add remaining flour, mixed with baking powder. Fold in stiffly beaten egg whites. Grease and flour a deep fluted ring mold. Pour in batter. Bake 1 hour at 300°. Turn out and serve sprinkled with confectioners sugar.
