Old Fashioned Coconut Pie

  • 1 1/2 cup sugar
  • 4 egg yolks
  • 2 cup coconut
  • 1/2 cup flour
  • 4 cup milk
  • 1/2 cup butter
  • 2 tsp vanilla
  • 2 baked pie shells

Mix flour and sugar well. Add milk, beaten egg yolks, butter and vanilla. Cook over low heat, stirring constantly until mixture thickens. Remove from heat; add coconut. Pour into baked pie shells. Beat egg whites with 7 tablespoons sugar and 1/4 teaspoon cream of tartar. Spoon onto pies. Spread over to the edge. Place in oven until slightly browned.

Makes 2 pies.
