Seven Minute Icing

  • 2 egg whites
  • 1 1/2 cup sugar
  • 1 1/2 tsp Karo®
  • 1/3 cup water
  • 1/4 tsp cream of tartar
  • 1 tsp vanilla

Combine in top of double boiler. Beat for a minute at high speed. Place over boiling water; beat until mixture forms peak. Remove from boiling water, add vanilla. Beat until thick enough to spread.

At Christmas, Valentine’s Day and Easter, add your favorite color coconut, just a small amount of food coloring to coconut.
