- 1/3 cup cold mashed sweet potatoes
- 1 Tbsp butter or margarine
- 2 cup confectioners sugar
- 2 cup shredded coconut
- 1 tsp vanilla
- 1/4 tsp salt
- 2 square unsweetened cooking cholcolate
Mix potatoes and sugar. Add butter, coconut, vanilla and salt. Blend well. Press into pan so that candy is about 1 inch thick. Melt chocolate and pour over candy. When firm, cut into squares.
Candy may be tinted and flavoring varied.
