Microwave Banana Pudding

  • 9 inch micro baked pie crust
  • 2 bananas, sliced
  • 2/3 cup sugar
  • 3 1/2 Tbsp cornstarch
  • 1/2 tsp salt
  • 3 cup milk
  • 3 egg yolks, slightly beaten
  • 1 Tbsp butter
  • 1 1/2 tsp vanilla
  • 1/2 tsp banana flavoring

Place sliced bananas in cooled crust. In a 2 quart glass bowl, mix together sugar, cornstarch and salt. Stir in milk in gradually and cook on HIGH 10 minutes. Stir frequently. Stir small amount of hot liquid into eggs, then return egg to hot liquid. Cook on HIGH 2 minutes. Add butter, vanilla and banana flavoring. Pour over bananas.

When cool, top with whipped cream.
