Watermelon Ice Cream

Louisiana Watermelon Festival Recipe

  • 1 cup evaporated milk
  • 1/2 cup sugar
  • 1 can sweetened condensed milk
  • 2 lbs watermelon (about 2 cups puree)
  • 1/4 cup lemon juice
  • 3 egg whites
  • Red food coloring

Combine the evaporated milk and sugar in a saucepan and cook over low heat until sugar is dissolved. Remove from fire and add the condensed milk, watermelon and lemon juice.

Chill in refrigerator.

Beat egg whites until stiff and fold into watermelon mixture. Add food coloring as desired. Put into a 2 quart freezer can. Add more evaporated milk if needed to fill can.
