Heart-Healthy Whole Wheat Muffins First

Farmerville First Baptist Church Sesquicentennial Cookbook 1847-1997

  • 1 cup whole wheat flour
  • 1 cup all purpose flour, sifted
  • 1/2 tsp salt
  • 2 1/2 tsp baking powder
  • 3 Tbsp sugar
  • 1 egg or egg substitute (or 2 egg whites)
  • 1 cup skim milk
  • 1/2 cup oil (or may use applesauce)

Spray muffin tin with cooking spray. Sift 2 kinds of flour together with salt, baking powder, and sugar. Add the egg, milk, and oil (or applesauce). Stir quickly only until barely blended; do not beat. Fill each muffin cup 2/3 full.

Bake at 425 degrees for 20 to 25 minutes. Makes 11 or 12 (2 1/4 inch) muffins. Calories per serving 175.
