Best-Ever Banana Muffins

Farmerville First Baptist Church Sesquicentennial Cookbook 1847-1997

  • 3/4 stick oleo
  • 1 egg
  • 2 ripe bananas, mashed
  • 2 Tbsp buttermilk
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1 1/4 cup flour, sifted

Cream oleo and sugar. Add egg and bananas. Mix baking powder and soda in buttermilk, add to creamed mixture. Add vanilla. Add flour; do not beat, but mix well.

Bake in greased muffin cups in 350 degree oven until light brown.
