Red Velvet Cake

CAKE:

  • 2 cup Wesson oil
  • 1 1/2 cup sugar
  • 1 cup buttermilk
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 1 tsp. vinegar
  • 2 1/2 cup flour
  • 2 eggs
  • 2 tbsp cocoa
  • 2 oz red food color
  • 1 tsp soda

Thoroughly mix cake ingredients (11) and pour equal amounts into 4 (9 inch) cake pans. Place into 350 degree oven until done (10 to 12 minutes).

ICING:

  • 1 box powdered sugar
  • 1 (8 oz) package cream cheese
  • 1 stick oleo
  • 1 tsp vanilla
  • 1 cup nuts, chopped (pecans)

Cream first 3 items, then add vanilla and chopped nuts. After mixing is complete, spread between layers, saving enough for top and side.
