Fresh Apple Cake

  • 1 1/4 cup salad oil
  • 2 cup sugar
  • 3 eggs
  • 3 cup flour
  • 1 tsp soda
  • 1 tsp baking powder
  • 1 cup dates, chopped
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup nuts
  • 4 cups fresh apples, sliced
  • 2 tsp vanilla

Mix sugar and oil in electric mixer. Beat on high speed for 1 minute. Add eggs one at a time beating each for 1 minute. Mix dry ingredients and dates. Add to mixture. Fold in vanilla, apples, and nuts. This is a very stiff batter but the apple juice thins it as it bakes. Grease and flour an angel food pan. Bake at 325 degrees for 1 to 1 1/2 hours. Test with straw. When cake shrinks from sides of pan it is done. Let cool on rack for 15 minutes before removing from pan. This cake freezes well for several months.
