Pumpkin Pie

Farmerville First Baptist Church Sesquicentennial Cookbook 1847-1997

  • 1 (16 oz) can solid pack pumpkin
  • 1 (13 oz) can evaporated skim milk
  • 2 tsp pumpkin pie spice
  • 8 packages sugar substitute
  • 2 tsp vanilla

Heat oven to 350 degrees. Spray 9 inch pie pan with nonstick spray. Place all ingredients in a mixing bowl. Beat 2 minutes with a wire whisk. Food processor or blender can be used. Pour into the prepared pie pan. Bake 50 minutes or until center is puffed up. May garnish with reduced fat whipped topping.

8 servings, 1/4 meat, 3/4 bread, 1/2 milk
