Farmerville First Baptist Church Sesquicentennial Cookbook 1847-1997
Heat oven to 325 degrees. Butter a 9 inch pie plate.
CRUST:
- 3 egg whites
- 1/2 tsp baking powder
- 1 cup sugar
- 10 soda crackers, crushed
- 1/2 cup pecans, chopped
Beat egg whites (at room temperature) with baking powder until foamy. Gradually beat in sugar until stiff. Fold in cracker crumbs and pecans. Spread inside pie plate. Bake 25 to 30 minutes. Cool. Fill with 1 quart fresh strawberries small and whole if possible. Cover with 1 carton whipped cream, sweetened (or use Cool Whip®). Let set several hours in refrigerator. Enjoy!
