BBQ POTATO CHIPS – Homemade

2 Large Potatoes,(1 white and 1 sweet potato is what I used in the video) washed and sliced thinly like with a mandolin slicer.

Place sliced potatoes in a bowl of cold water to soak and release starches. This is what helps the chips stay crunchy. Rinse and soak again until the water stays clear. (it took 3 times for me) Then place the slices onto a sheet with paper towels on the bottom. Place paper towels on top and press to dry them.

Heat oil in a frying pot to 300 degrees F and fry in small batches for 5 to 8 minutes until they are as browned as you like. Sweet potatoes take closer to 8 minutes but the white potatoes will be done closer to 5 minutes. Take up the chips onto a sheet with a wrack for draining. Sprinkle them while they are still hot with grease with the seasoning so it will stick well.

BBQ SEASONING:

  • 2 teaspoons PAPRIKA
  • 1 teaspoon BROWN SUGAR
  • 1/2 teaspoon SALT
  • 1 teaspoon ONION POWDER
  • 1 teaspoon SMOKED PAPRIKA
  • 1/4 teaspoon CHILI POWDER
  • 1/2 teaspoon GARLIC POWDER

Place all ingredients into a small bowl and whisk to mix well.
