The Hillbilly Kitchen – Down Home Country Cooking

This is my mom’s version of the Libby pie recipe. My mom taught me how to make pumpkin pie when I was a kid and I still make it her way. My family likes pumpkin pie above all other pies and I believe it’s because of this special recipe.

Ingredients:

  • 15 ounce can – Whole pumpkin
  • 12 ounce can – Evaporated milk
  • 2 – Eggs
  • 3/4 cup – Packed brown sugar
  • 1/2 teaspoon – Salt
  • 1 teaspoon – Cinnamon
  • 1/2 teaspoon – Ginger
  • 1/4 teaspoon – Nutmeg
  • 1/4 teaspoon – Cloves
  • Unbaked 9 inch pie shell

  1. Loved the pumpkin pie recipe. My family loved it. I have a super easy pie dough recipe to share. 1 3/4 Cup of flour, 3/4 Cup of Crisco Shortening, and 1/3 Cup of cold water with a dash of salt. Beat with Electric Egg beater. Super easy, no cutting in butter or shortening.
