Low-Fat Broccoli Quiche

Farmerville First Baptist Church Sesquicentennial Cookbook 1847-1997

  • 1 (9 inch) pie crust
  • 1 cup broccoli, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup mushrooms, chopped
  • 2 whole eggs
  • 2 egg whites
  • 1 tsp parsley
  • 1/4 tsp black pepper
  • 1/4 tsp salt (may be omitted)
  • 3/4 cup non-fat milk
  • 3/4 cup low-fat Swiss of Mozzarella cheese, grated
  • 2 Tbsp flour

Preheat oven to 400 degrees. Bake pie crusts for 5 minutes. Remove from oven and set aside. Decrease oven temperature to 350 degrees. Combine whole eggs and egg whites ad beat together. Add chopped broccoli. onions, mushrooms, salt, pepper, and parsley. Stir together gently. Add milk, cheese, and flour. Stir well so no flour clumps form. Pour egg mixture into warm pie crust. Bake 35 to 40 minutes or until knife inserted into center comes out clean.

Serve 6.

Exchange: 1 serving equals 1 meat, 1 bread, 1/2 vegetable, 1 fat.
