- 8 oz boneless and skinless chicken breasts, cut into bite-sized pieces
- 14 oz package VIP mandarin stir-fry vegetables
- 1 box Uncle Ben’s Minute wild rice
- Non-stick cooking spray
Cook chicken in non-stick skillet that has been sprayed with spray on medium-high heat until no longer pink and tender. Add vegetables and cook 5 to 10 minutes until vegetables are tender and crisp. Add cooked rice.
Stir and serve.
Makes 4 servings (2 meat, 1 3/4 bread, 1 1/4 vegetable).
