Cauliflower Salad (Low-Fat)

  • 1 head cauliflower, break apart, wash, and drain well
  • 2 bunches green onions, chopped
  • Juice of 1 lemon
  • 2 Tbsp fat-free Ranch dressing

Toss all ingredients together, drain in colander and serve.

Exchange: 1 cup equals 1 vegetable.
