Cherry Coke Salad

  • 2 (3 1/2 oz) packages cherry Jello®
  • 20 oz can crushed pineapple (Dole has a 20 oz can)
  • 1 (16 1/2 oz) can dark sweet pitted cherries, drained and quartered.
  • 1 (12 oz) can Coca-Cola®
  • 1/2 cup pecans, chopped

Dissolve Jello® in heated juice drained from crushed pineapple (about 1 cup). Cool. Add to Jello® mixture the drained pineapple, cherries, Coca-Cola, and pecans and mix well. Place in refrigerator to congeal. Cut in squares. This is very good with turkey and dressing.

  1. I am Loyce Parks’ grandson and I am glad to see her recipes published. This is a family favorite that we always enjoyed at the holidays. I have a cousin who could eat his weight in this stuff after he discovered how delicious it is!
