Miniature Quiche Cups

  • 1 egg, lightly beaten
  • 1 cup milk
  • 1/8 tsp pepper
  • 1 tsp parsley
  • 1/2 cup cooked crumbled bacon, ham, or pepperoni
  • 1/4 cup all purpose flour
  • 1/2 tsp salt
  • 1 Tbsp dry minced onion
  • 1 cup shredded sharp cheddar cheese

Combine egg, flour, 1/2 cup milk, salt, pepper, onion and parsley. Beat until smooth. Add remaining milk, cheese, and choice of meat. Grease miniature muffin tins (or spray with Pam®) and fill each cup almost to top. Bake 1t 400 degrees for about 20-25 minutes until done and lightly brown.

Makes 24.

Note: I have used self-rising flour and they were just as good. Also cooked, drained sausage is a good meat choice.
