Beefy Jalapeno Cornbread

  • 1 cut yellow cornmeal
  • 1 tsp salt
  • 1/2 tsp soda
  • 1 cup milk
  • 2 eggs
  • 1/3 cup Wesson® oil
  • 1 (17 oz) can cream corn
  • 1 1/2 lbs ground beef
  • 1 large onion, chopped
  • 1 (8 oz) package cheddar cheese, grated
  • 1 (8 oz) Monterey Jack Jalapeno cheese, grated

Combine meal, salt, soda, milk, eggs, and oil. Add corn and set aside.

Brown ground beef and drain thoroughly.

Sprinkle 1 Tbsp meal in a 10 1/2″ greased iron skillet. Pour half of batter in skillet. Sprinkle evenly with ground beef, top with onions and cheeses. Pour remaining batter over the top. Bake at 350 degrees for 50-60 minutes until golden brown.

You can add Jalapenos to taste.
