Corn Bread Muffins

  • 1 1/2 cup plain corn meal
  • 3 tsp baking powder
  • 2 eggs
  • 2 cup sweet milk
  • 1/4 cup plain flour
  • 1 tsp salt
  • 1/4 cup oil
  • 1/4 cup sugar

Preheat oven to 425 degrees.

Combine all ingredients and mix well. Grease muffin pans well and heat in oven. Pour batter into hot greased pans and bake for about 20 minutes or until golden brown. Brush with butter.

Makes 12 muffins and they’re good!
