Mixed Vegetable Casserole

  • 1 large package mixed vegeables
  • 1 1/2 cup grated cheese
  • 1 cup mayonnaise
  • 1 stick oleo
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 tube crackers, crumbled

Cook vegetables according to package directions until tender. Put in greased casserole dish. Mix onion, celery, cheese, and mayonnaise. Spread over vegetables. Melt oleo; mix with cracker crumbs and sprinkle over top. Bake at 350 degrees for 30 minutes or until done.

Aunt Lovie’s: No celery and I use 8 oz Velveeta cheese and Ritz crackers. DELICIOUS!!!
