Sweet Potato Casserole

  • 4 medium sweet potatoes
  • 1/2 stick butter or margarine
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup sugar
  • 3/4 cup sweet milk, more or less

Cover potatoes, peeled and cut in pieces, with water and boil until real tender. Drain well and mash. Beat in the eggs, melted butter or margarine, sugar, milk, and vanilla. Pour into greased casserole. Cover with topping and bake at 350 degrees for about 30 minutes.


  • 1 cup chopped pecans
  • 1 tsp cinnamon
  • 1/2 stick butter or margarine, softened
  • 1/2 cup brown sugar
  • 1/2 cup flour

Mix until crumbly and sprinkle over top of casserole.
