- 1/2 cup Crisco®
- 2 cup sugar
- 3 eggs beaten
- 1 cup buttermilk
- 3 cup plain flour
- 2 tsp soda
- 1 apple, soda
- 2 Tbsp cocoa dissolved in 1/2 cup hot water
Cream Crisco® and sugar. Add eggs. Mix soda into buttermilk and add alternately with sifted flour. Add cocoa and water and stir in chopped apple. Bake in 3 layers at 350 degrees about 30 minutes. Let cool.
Icing:
- 3 cup sugar
- 2 cup sweet milk
- 1 stick oleo
- pinch of soda
- 1 tsp baking powder
- 2 (6oz) package frozen coconut
- 2 cups chopped pecans
- 1 tsp vanilla
- 1 small can crushed pineapple
Optional:
- 1 cup raisin (I don’t use these)
- juice of 1 orange
Mix sugar, baking powder, and soda in a BIG boiler. Add milk and margarine and cook until thickens. Watch carefully, it will boil up to a very big froth. When thickened, remove from heat and add other ingredients. Let cool and spread on cake punching holes in cake to let the liquid soak in . Be sure to frost top and sides.
This a good cake for Christmas but it ain’t bad, anytime.
