Jam Cake

  • 1 cup butter or margarine
  • 1 cup blackberry jam
  • 1 cup sugar
  • 4 eggs beaten separately
  • 1/2 tsp soda
  • 1 3/4 cup cup plain flour
  • 1/2 cup buttermilk
  • 1 tsp each each: cinnamon, cloves, and allspice
  • 1 Tbsp baking powder

Preheat oven to 35o degrees. Grease and flour a 13″ by 9″ pan. Combine butter and sugar. Beat until creamy. Add blackberry jam and beaten eggs. Sift dry ingredients and add to mixture alternately with buttermilk. Beat as little as possible. Cook about 30 minutes or until it tests done with toothpick. This cake is good for breakfast as a sweet bread or frosted with your favorite topping.
