Easy Coconut Cake

  • 1 box white or yellow cake mix
  • 1 tsp coconut flavoring
  • 1 package frozen coconut, thawed
  • 1 cup sugar
  • 1 cup PET Evaporated Milk®, undiluted
  • 8 oz Cool Whip®

Bake cake mix as package directs in 9×13 pan. (I like Betty Crocker Golden Vanilla Cake Mix®). Mix sugar and milk (or can use cream), bring to boil and boil one minute. Stir in flavoring. Punch holes all over in hot cake, spoon mixture over top. Let set 24 hours. Spread with Cool Whip®, sprinkle coconut over top.

Keep in refrigerator.
