- 9 inch unbaked pie shell
- 2 eggs
- 1/4 cup flour
- 1/2 cup milk
- 1 1/2 cup shredded coconut
- 1 1/2 cup sugar
- 1/2 tsp salt
- 1 stick oleo (less 1 Tbsp)
- 1/4 tsp coconut flavoring
Beat sugar, salt and eggs until mixture is lemon color. Add butter and flour and blend well. Add milk, fold in 1 cup coconut. Pour into pie shell and top with remaining coconut. Bake in slow over (300 to 350 degrees) about 1 hour or until set and brown.
