- 1 cup butter or oleo
- 1/4 tsp salt
- 2 1/2 cup plain flour
- 1/2 pint of strawberry preserves
- 1 1/2 cup sugar
- yolks of 2 large eggs
- whites of 4 large eggs
Grease a large baking sheet. Heat oven to 350 degrees. Work butter, 1/2 cup sugar, the 2 egg yolks, and salt together with hands and pat into the pan. Bake 15 – 20 minutes until lightly browned. Spread preserves on top. Beat egg whites until stiff. Add the other 1 cup sugar — a little at the time. Then stir in pecans and spread on cookies. Bake about 25 more minutes until brown. Let cool and cut in squares.
