Bars and Squares
Christmas Cookies
- 2 (6 ounce) packages butterscotch morsels
- 1/2 cup butter or margarine
- 4 eggs
- 1 cup firmly packed brown sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 1/4 teaspoons salt
- 2 cups chopped pecans
Melt butterscotch morsels and butter in top of a double boiler over simmering water; remove from heat.
Combine eggs and sugar, beating at medium speed of an electric mixer until light and fluffy.
Sift together flour, baking powder, and salt; add to creamed mixture, stirring well. Stir in butterscotch mixture and pecans.
Pour mixture into a lightly greased 15x10x 1 inch jellyroll pan. Bake at 350° for 25 minutes. Cool completely in pan, and cut into 2 inch squares. Store in airtight containers.
Yield: about 3 dozen.
