Chocolate-Butterscotch Squares

Christmas Cookies

  • 1/2 cup butter or margarine
  • 1 egg yolk
  • 2 tablespoons water
  • 1/2 teaspoon almond extract
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • Dash of salt
  • 1 (6 ounce) package butterscotch morsels
  • 1 (6 ounce) package semisweet chocolate morsels
  • 1 cup finely ground pecans or walnuts

Combine butter, egg yolk, water, and almond extract in large mixing bowl; beat at medium speed of an electric mixer until well blended.

Sift together flour, sugar, baking powder, and salt in a medium mixing bowl; add to butter mixture, blending well. Press dough into a greased 13x 9×2 inch baking pan. Bake at 350° for 10 minutes; remove from oven, and immediately sprinkle butterscotch and chocolate morsels over top. Return to oven, and smooth morsels evenly over pastry. Cover with topping, and sprinkle with pecans.

Bake an additional 30 to 35 minutes. Cool and cut into 1 1/2 inch squares.

Store in airtight containers.

Yield: about 4 dozen

Topping:

  • 2 eggs beaten
  • 3/4 cup sugar
  • 1/4 cup plus 2 tablespoons butter or margarine, melted
  • 1 teas vanilla extract
  • 1/2 teaspoon almond extract

Combine all ingredients in a medium mixing bowl; mix well.

Yield: topping for 4 dozen squares.
